Cereal Crusted French Toast

Cereal-Crusted_152_130.jpgFrench toast is one of my favorite foods, and my version is certainly fun to make, especially if you get the whole family involved. It's also a great opportunity to revisit some of your favorite childhood cereals. I like to use Fruity Pebbles, but any crunchy cereal will work.

Makes 4 servings

4 large eggs
½ cup milk
½ cup heavy cream
½ teaspoon vanilla extract
1 tablespoon granulated sugar
8 thick slices of Challah bread, or brioche
3 cups crushed cereal
2 to 4 tablespoons butter or vegetable oil
confectioners' sugar

In a large bowl, whisk eggs, milk, heavy cream, vanilla extract, and sugar until combined, set aside. Pour crushed cereal into a separate shallow dish. Heat oil in a large frying pan, or griddle, over medium heat. Dredge bread through egg mixture, coat with crushed cereal, and lay into hot pan. Cook French toast about 3 minutes per side until golden brown. Remove from pan and, if desired, dust with confectioners' sugar. Serve with crispy bacon and pure maple syrup.

This looks like the perfect recipe for my two girls, age 6 and 7. I just introduced them to Fruity Pebbles (see what happens when Daddy goes grocery shopping?) and I will definitely give this a go this Saturday.
