Sure enough if you wrap anything in bacon it's bound to be delicious and these little appetizers, classic pub food in England, are no exception. Make them for your next gathering and I promise they won't last long. In fact, you might want to make a double batch. Just to be safe.
Makes 6 to 8 servings
18 to 20 pitted prunes
½-pound Stilton cheese, cut into 18 to 20 small cubes
6 to 8 bacon slices, cut crosswise into thirds
Heat oven to 450° F. Line a large rimmed baking sheet with parchment paper and set aside.
Stuff 1 cube of cheese into each prune, and wrap with 1 piece of bacon, securing it with a toothpick. Arrange prunes on baking sheet and bake for 5 to 6 minutes. Turn prune's over and bake for 5 minutes more, until crispy. Drain on a paper towel lined plate and transfer to a serving platter. Serve hot.
