Pineapple Nutella Panini Sandwiches

Pineapple-Nutella_152_130.jpgThese sandwiches are to die for. Pineapple and Nutella are already a classic combination, but the addition of buttery Brie cheese sends them over the top. Don't worry if you don't have a panini press, they fry up just as well in a hot pan.

Makes 4 servings

8 slices Challah bread, ¼ inch thick
½ cup chocolate-hazelnut spread, such as Nutella (http://www.nutellausa.com)
4 slices Brie cheese (2-ounces each)
½ pineapple, peeled, cored, and thinly sliced
4 tablespoons unsalted butter, softened
confectioners' sugar

On one slice of bread spread 2 tablespoons Nutella, layer with 2 slices of pineapple, one slice of Brie and top with another slice of bread. Repeat with remaining sandwiches. Heat a panini press according to the manufacturer's instructions or heat a large frying pan over medium heat. Butter the outside of sandwiches and lay them in the panini press, or frying pan, and grill them until the outsides are a dark golden brown and the cheese has melted, about 5 to 7 minutes, or 3 to 4 minutes per side if using a frying pan. Do not be afraid to let sandwiches develop a dark golden crust, as it is important to make sure that the ingredients inside become hot. Remove sandwiches from heat and slice on the diagonal. Dust with confectioners' sugar and enjoy.
