I always cook to make leftovers. Not only do they often taste better once they have been given a new life, they help to save you time in the kitchen. Here I pair leftover steak with Gorgonzola cheese, a classic combination, and add some sweet red pepper relish for a delicious contrast.
Makes 2 servings
2 ciabatta rolls, sliced
2 tablespoons sweet red pepper relish
2 tablespoons mayonnaise
4 teaspoons Dijon mustard
4 slices Gorgonzola cheese
½ cup baby arugula leaves, divided
½ pound leftover steak, thinly sliced and divided
To assemble sandwiches spread 1 tablespoon of relish on each bottom half of each roll and top with steak and cheese slices. Spread 1 tablespoon of mayonnaise and 2 teaspoons of mustard on each top half of the rolls and mound with arugula leaves. Close sandwich halves together, slice on the diagonal, and enjoy!
