Recipe: Lemon-Mint Cooler

When the temperatures soar, I whip up a pitcher of these nonalcoholic drinks to cool off. They are sort of like a grown-up Slurpee. The lemon and mint are refreshing and delicious and, sometimes, when I am feeling adventurous, I substitute fresh basil or fresh cilantro instead of mint.

Lemon-Mint Cooler
Makes 2 servings

  • 1 pint lemon sorbet
  • 1 c. lemonade
  • 1/4 c. packed fresh mint leaves
  • 10 to 12 ice cubes
  • 2 lemon slices

1. Combine sorbet, lemonade, mint, and ice cubes in a blender and mix until smooth. Pour into glasses and garnish with lemon slices. Enjoy, and stay cool!

What a great idea!! I never have just a little mint, I always have lots (it grows really well where I live) and I'm always searching for new uses. I will definitely try this recipe.
