
I love chicken and eat it regularly. It's cheap, healthy, and versatile. Inspired by the current economic crisis facing the nation and the box loads of plums that my dad mails me straight from his tree, I decided to create a recipe that was delicious and cost effective.
Inexpensive Plum Glazed Chicken Legs
Makes 4 servings
For Plum Sauce
1. Combine the plums, soy sauce, brown sugar, pepper, cinnamon, clove, and nutmeg in a medium saucepan with a ¾ cup of water and bring to a boil. Reduce to a simmer and cook until the plums are tender and the sauce has thickened, about 20 minutes. Remove from the heat and purée in blender until smooth.
2. Heat oven to 400° Fahrenheit. Arrange drumsticks in a large roasting pan and brush with plum sauce. Place in the oven and roast until done, about 50 minutes, turning and glazing with sauce every 10 minutes or so. Serve immediately.
Sounds tasty. Ms BonBon loves both chicken and plums. Truth be Told, Drumsticks are my all-time favorite. WOW!!!
