Recipe: Beef Sliders and Sweet Potato Fries

SLIDERS_152.jpgThere is something fun about eating things that are mini. Here in New York there is a really fun restaurant called The Stanton Social that serves delicious tapas-style versions of classic American fare, like meatballs, lobster rolls, and Kobe beef sliders. Serving these sliders of mine will ensure that the whole family is happy eating the same meal.


Beef Sliders and Sweet Potato Fries
Makes 4 servings

For Sweet Potato Fries:

  • 2 large sweet potatoes, peeled and cut into ¼-inch sticks
  • 2 tablespoons extra-virgin olive oil
  • ½ teaspoon kosher or sea salt

For Sliders:

  • 1 pound lean ground beef
  • 1 tablespoon smoked paprika
  • 1 teaspoon kosher or sea salt
  • ½ teaspoon ground black pepper
  • 1/3 cup grated cheddar cheese
  • 1/3 cup crumbled blue cheese

For Serving:

  • sliced plum tomatoes
  • sliced onion
  • pickles
  • torn lettuce leaves
  • dinner rolls, such as Martin's Famous Potato Rolls
  • ketchup
  • mustard

1. Heat oven to 425° Fahrenheit. Toss sweet potatoes with olive oil and place on a baking sheet in an even layer. Bake, turning once halfway through, until golden and crisp, about 25 minutes. Transfer to a plate lined with paper towel and toss with salt.

2. For the sliders, combine the ground beef, smoked paprika, salt, and pepper and form into 8 mini-hamburger patties. Place on a baking pan and roast them in the oven for about 8 minutes. Top the sliders with cheese and roast until the cheese had melted, about 5 minutes more.

Transfer sliders to dinner rolls and serve with your favorite toppings and a side of sweet potato fries.
