Steak-Frites Bites with Blue Cheese and Pickled Shallots

Upon trying one of these super easy appetizers, Scott declared them to be "A steak dinner in one bite!" And the best part? You can prepare all of the elements in advance and assemble them quickly before your guests arrive!



Steak-Frites Bites with Blue Cheese and Pickled Shallots
Makes 10 servings (about 30 pieces)

  • 1 large shallot, thinly sliced
  • 1/2 cup white wine vinegar
  • 2 tablespoons granulated sugar
  • 1/2 cup Greek yogurt
  • 1/2 cup crumbled blue cheese
  • 1 tablespoon chopped fresh parsley
  • 2 tablespoons extra-virgin olive oil
  • 1/2 pound skirt steak
  • kosher or sea salt
  • ground black pepper
  • about 30 kettle cooked potato chips


1. Place the shallots in a small bowl. Bring the vinegar and sugar to a boil in a small saucepan and pour over the shallots. Cover with plastic wrap and chill until cold.

2. Meanwhile, mix the yogurt, blue cheese, and parsley together and chill.

3. Heat the olive oil in a skillet until very hot. Liberally season steak with salt and pepper and lay it into the hot pan. Cook both sides of the steak until browned and crisp, about 4 minutes per side. Transfer steak to a plate and let rest for 8 to 10 minutes. Thinly slice the steak against the grain into 1-inch pieces.

4. Place a dollop of yogurt-cheese mixture onto each potato chip and top each with a piece of steak. Garnish each with a few slices of pickled shallot and serve.
