Maple Cornbread

cornbread-152-130.jpgThe cold weather just makes me want to snuggle up with the most comforting of dishes, a warm soup, a hearty stew, or some braised short ribs, served, of course, with my dad's cornbread. It's even more delicious the next day warmed up and served in a bowl with milk.




Makes 8 servings

  • 1 1/2 cups white or yellow cornmeal
  • 1/4 cup all-purpose flour
  • 1 tablespoon baking powder
  • 1 teaspoon kosher or sea salt
  • 1 large egg
  • 1 1/2 cups buttermilk
  • 1/4 cup butter, melted
  • 3 tablespoons maple syrup

1. Heat oven to 425° Fahrenheit. Butter an 8X8 inch pan, set aside.

2. Combine all of the dry ingredients in a large bowl. Stir in the egg, melted butter, buttermilk, and maple syrup until combined.

3. Pour into the prepared pan and bake until crisp and golden on top, about 30 minutes.
