Recipe: Miso Glazed Cod

cod-152-130.jpgCod is one of my favorite fishes of all time, and I love this sweet and savory method of preparing it. The miso paste pairs nicely with the brown sugar and rice vinegar, and is the perfect foil for the cod. Miso paste can be found at Asian markets or at an extremely well stocked grocery store.


Miso Glazed Cod
Makes 4 servings

  • 4 cod fillets, 6 to 8 ounces each
  • 1/4cup low-sodium white miso paste
  • 2 tablespoons light brown sugar
  • 1 1/2 tablespoons rice wine vinegar
  • 2 teaspoons sesame oil
  • 1 teaspoon black sesame seeds
  • 3 scallions, sliced

1. Stir together the miso paste, brown sugar, rice wine vinegar, and sesame oil and stir well until well combined. Brush the fillets with about half of the miso mixture and let marinate for about an hour, chilled.

2. Heat broiler. Cook fish under the broiler until the fish have caramelized slightly, about 3 minutes. Remove from the broiler and brush with the remaining glaze. Lower oven to 350° Fahrenheit and cook the fish until flaky, another 4 to 5 minutes. Remove from the oven and sprinkle with sesame seeds and scallions. Serve with brown rice, or whole wheat noodles.
