Drink of the Week: Mint Mango Mimosas

Reward all of mom's hard work a pitcher at a time, because the last thing you want to do on Mother's Day is make a cocktail one by one. I updated the traditional brunch mimosa into a pitcher format using mangos and mint. I love using tropical juices in cocktails because it makes everything seem much more exotic. The sweet mango is balanced by the orange juice, and the mint gives the cocktail a wonderful refreshing quality.

Mint Mango Mimosas
Makes 6 drinks, 1 pitcher

  • 2 cups chopped ripe mango
  • 1 cup orange juice
  • 1 bunch mint, julienned (see note)
  • 1 bottle prosecco
1. Place the mango and orange juice (just enough to cover the mango) in blender and process until smooth. Pour mango mixture and julienned mint into pitcher. Add bottle of prosecco and stir gently. Serve in champagne flutes.

*To Julienne mint, stack the leaves, roll them like a cigar, and slice them across.
