Too Much Potato Salad!

Oh my gosh...I am so stuffed! Scott, Ashley, and I took a little road trip up to Rochester, New York to visit our Aunt Susie and her family for the weekend and we ate, and drank, and ate...a lot! Our aunt prepared all of our favorite summer foods that Ashley and I remember so fondly from our childhood visits to upstate New York--Hoffman's White Hots (aka Coney's) with Nance's mustard, salt potatoes, fresh corn, potato salad, green beans, and berry shortcakes.

An avid home cook, Aunt Susie whipped up some new favorites too--Grilled Halibut with Chimichurri Sauce and fresh Costanza's sausages. There was, of course, lots of wine and champagne (now that we are all of drinking age) too. The reason for our visit? A belated party for our cousin Amanda, who just graduated from high school, and, as much as we love our cousin Amanda, what really tempts us up to Rochester is our Aunt's fabulous home cooking.

This week I shared a recipe for German Potato Salad, in honor of my German roots, but what to do with the leftovers? (Are you reading Aunt Susie? I saw that whole extra tray of potato salad in the fridge after the party!):

Baked Potato Salad Casserole - Use this recipe to turn your leftover German Potato Salad into a warm potato casserole, or as my Dad's girlfriend calls 'em "Cheesy Potatoes".

Potato Pancakes - Roughly mash up some of the leftover potato salad and whip up some easy potato pancakes.

Hash Browns - Gently break up some of the potatoes and sauté in a non-stick skillet until crispy and heated through. Serve with some scrambled eggs for a super quick breakfast.

Deep-Fried Potato Salad - Ok, full disclosure: I've never made this, but is sounds fabulous! Mash the leftovers, add some mayonnaise, and scoop into balls. Roll in bread crumbs and fry in hot oil. Voila! Deep Fried Potato Salad.

Oh dear, now I'm hungry again, I'm sure I can find an errant Coney somewhere!
