Recipe: Green Eggs and Ham to Go

GEH_152.jpgWho wasn't a fan of Dr. Seuss when they were a kid? The Cat in the Hat, Horton Hears a Who, Fox in Socks, and, my personal favorite, Green Eggs and Ham, brought to life some of the silliest and endearing characters in all of children's literature. When developing an easy, on-the-go, breakfast sandwich for busy parents I figured why not go with a classic?

Recipe: Italian Wedding Soup

ITALIAN_WEDDING_SOUP_152.jpgWhen I think of kid friendly recipes I can't help but think about Scott's little cousin, Nathan. At two years old, he has developed quite a sophisticated palate-his current obsession is Italian Wedding Soup. Whether you are young or old, this soup is definitely a crowd pleaser.

Recipe: Citrus Marinated Kabobs with Couscous

KABOB_152.jpg

Kabobs are a simple way to feed your family a quick and healthy meal. All you have to do is cut up some fresh ingredients and let your family do all the work. Let them skewer their sticks with their favorite items, marinate them quickly in a simple sauce and either throw them on the grill or place them under your broiler.

Recipe: Pizza Two Ways

PIZZA_152.jpg

Friends and co-workers scoff when I give them the "I had no time to cook so I threw together a simple pizza" line. They think that because I work with food all day long that I must know some professional pizza making tips --I don't. (They didn't teach us pizza making in culinary school.) The best part about pizza night is everyone can have his or her favorite toppings...and, of course, don't forget the ranch dressing for dipping!

Recipe: Beef Sliders and Sweet Potato Fries

SLIDERS_152.jpgThere is something fun about eating things that are mini. Here in New York there is a really fun restaurant called The Stanton Social that serves delicious tapas-style versions of classic American fare, like meatballs, lobster rolls, and Kobe beef sliders. Serving these sliders of mine will ensure that the whole family is happy eating the same meal.

Recipe: Fish and Beef Tacos

TACOS_152.jpgWhenever I visit my family in California, one of my first stops is San Francisco's Mission District for some authentic Mexican cuisine. My favorite place, La Taqueria, is famous for fresh carne asada tacos and cool cantaloupe agua fresca. Though my New York apartment may lack authenticity, it's always comforting to recreate taco night whenever I am feeling homesick.

Recipe: Chocolate Squash Brownies

BROWNIE_152.jpg

Substituting applesauce or pumpkin purée for some of the fat in baked goods is a great way to lighten up your favorite desserts. I like to trick my friends with these surprisingly rich brownies. I let them scarf down a few before I tell them that they contain about half the fat of regular brownies with the added benefit of winter squash.
