Chicken Quesadillas With Olives

By swapping out the usual white tortillas and full-fat cheese for healthier alternatives, even Mexican food makes an appearance at dinnertime. Serves 1 2 6-inch tortillas, 100% whole-wheat, no sugar added ½ cup part-skim mozzarella cheese, grated 2 oz chicken, cooked, shredded 2 stuffed green olives, sliced Heat a large, non-stick skillet over medium heat. Place one tortilla in skillet. Top with 2 tablespoons of mozzarella, half of the chicken, half of the olives. Cover the skillet and cook for 1 minute. Uncover, and fold the tortilla over the filling and cook for 1 minute longer or until the tortilla starts to brown underneath. Repeat with the remaining tortilla. Serve warm.
