Following the “Six Steps to Happiness,” outlined in The CR Way to Happy Dieting, makes healthy low-calorie living fun and satisfying. If you need to lose weight, even that’s easy to do. The meal plans are delicious, chocked full of nutrients, and specifically designed to increase your level of happiness. For example, “Sweets-and-Beets-over-Barley” is a great CR Way recipe for increasing serotonin, which activates brain signals that increase relaxation and ultimately the ability to control cravings for comfort foods. Sweets and Beets over Barley The joy of barley is a well kept diet secret – high nutrient content, low glycemic effect, subtle flavor, and satisfying texture. Once you have this in your freezer or fridge, you may be surprised at how often you want to use it: great as an ingredient, as in this case with sweet and beets – and delicious on its own! We suggest using lemon or lime juice along with olive oil to dress the dish. You may prefer one or the other or it may depend on your mood. Serves two, multiply or divide the recipe as you like. Ingredients 1 package pearled barley 1 small sweet potato (7 oz when peeled) cut to bite size 1 medium beet (7 oz when peeled) cut to bite size ½ teaspoon and then a generous sprinkling pumpkin-pie-spice ½ teaspoon and then a generous sprinkling ground cloves 2 teaspoons olive oil 1 teaspoon citrus juice, or to taste Directions Follow the directions on the package for cooking the barley on the stovetop. While the barley is cooking Add water to a sauce pan and bring to a medium boil. Add sweet potato pieces. Return to a medium boil, cooking overall for 5 minutes or less, according to your taste. During the last minute add the ½ teaspoon of pumpkin-pie-spice. Stir.Drain, sprinkle with pumpkin-pie-spice, and set aside. Similarly, cook the beet: Bring water to a boil in a sauce pan. Add beet pieces. Return to a medium boil, cooking overall for 6 or 7 minutes, to taste. During the last minute add the ½ teaspoon of ground cloves. Stir.Drain, sprinkle with clove to taste, and set aside. Serving When the barley is ready, spoon ¾ cup on two plates. Arrange half the sweet potatoes and beets on each plate Drizzle with the olive oil and citrus juice.
