Sip, Snack & Screen – Buffalo Chicken Ring & Lemon Fig Martini

This week at Boot Camp, tensions are running at an all-time high. It looks like all of the campers might be headed for a breakdown. The tears will be fiercely flowing and WE wanted to make sure you had the right stuff for sipping and snacking on during your viewing party. They say there’s no use in crying over spilled milk, but WE might cry if you spill our delicious lemon fig martini! We paired the cocktail with a slightly spicy but oh-so-comforting buffalo chicken ring. Someone pass the tissues, this week is going to be intense!

Lemon Fig Martini

  • 3 ounces fig-infused vodka, or store-bought fig vodka
  • ¼ ounce dry vermouth
  • 2-3 dashes bitters
  • One lemon

Slice lemon in half, squeeze. Discard pulp and muddle peel of lemon. This will add aromatic sweetness to the drink. Over ice, combine all ingredients. Shake well, and strain into a chilled martini glass. Garnish with a slice of fig, or lemon peel. Enjoy!

Buffalo Chicken Ring

  • 4 oz cream cheese (half of 8-oz package), softened
  • ¼ cup hot sauce or red pepper sauce
  • 2 ½ cups chopped cooked chicken (1/2-inch pieces)
  • 1 cup shredded Monterey Jack cheese (4 oz)
  • 2 cans (8 oz each) refrigerated crescent dinner rolls
  • 1/3 cup crumbled blue cheese

Prior to making recipe, bake chicken or use a store-bought rotisserie chicken (cuts down on cooking time). Preheat oven to 375 degrees.

In a medium bowl, use an electric mixer to whip together cream cheese and hot sauce. Then, add chicken and cheese mixing with a wooden spoon.

On a cookie sheet, arrange crescent rolls so that they overlap, and look like a sun. The short sides of the each dough triangle should be in the center. Arrange chicken mixture along crescent rolls in the shape of a ring. Be careful not to overfill. Take ends of crescent rolls and fold over to the middle of the ring. Bake approximately 20-25 minutes or until golden brown.

Allow ring to cool for about 10 minutes before slicing and serving. Serve with blue cheese or ranch dressing for dipping along with fresh celery and carrots.
